Would you believe that I just started to like cucumbers a year ago?  It’s funny how your taste buds change over the years.  Cucumbers, pickles, and mustard are three foods that I hated until last year… and now I can’t get enough!  My Cucumber Tomato Salad with Herb Vinaigrette is the perfect way to enjoy cucumbers.  Cucumbers and grape tomatoes tossed in a creamy herb vinaigrette topped with feta cheese.  Delicious, packed with flavor, and easy to make!  This is a Weight Watchers friendly recipe and each serving is 2 SmartPoints.

 

I usually eat cucumbers as a snack with hummus so I always have them laying around.  I love the crunch that cucumbers make and could eat them every day!  A while back I was craving cucumbers and wanted to make a side salad for lunch.  Not only do I always have cucumbers on hand, but I always have grape tomatoes.  These are my favorite kind of tomatoes because they are sweet and you can just pop them in your mouth.  These tomatoes are perfect for salad, which I usually eat for lunch during the week.

 

This salad is so delicious that it will leave you wanting seconds… or thirds :-).  The longer the salad sits, the better so that the vinaigrette can soak into the cucumbers.  I like to make this salad on Sunday so that I can have it ready to grab and go during the week for lunch.  This would also be a great side dish for a pot luck or to bring on your next picnic!  This recipe is super easy to follow and can easily be made ahead of time.  To a large bowl, add sliced cucumber, sliced grape tomatoes, sliced red onion, salt, pepper, and chopped basil.

To make the herb vinaigrette, add Greek yogurt, light mayo, olive oil, red wine vinegar, minced garlic, dried oregano, fresh dill, lemon zest, and lemon juice to food processor or blender.  Pulse until all ingredients are well combined.  Pour the dressing over the cucumbers and garnish with feta cheese.

Ingredients

  • 2 Medium Cucumber
  • 1 Cup Grape Tomatoes
  • ¼ Red Onion
  • 1 Tablespoon Fresh Basil
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • Herb Vinaigrette Ingredients:
  • 2 Tablespoons Fat Free Plain Greek Yogurt
  • 2 Tablespoons Light Mayo
  • 1 Teaspoon Olive Oil
  • 1 Teaspoon Red Wine Vinegar
  • 1 Clove Garlic
  • ½ Teaspoon Dried Oregano
  • 1 Teaspoon Fresh Dill
  • 2 Tablespoons Fat Free Feta Cheese
  • Zest of Half a Lemon
  • Juice of Half a Lemon

Instructions

  1. Cut ends of cucumbers off and discard.
  2. Slice cucumber in half, then slice the halves in half.
  3. Dice cucumbers and add to a large bowl.
  4. Slice tomatoes in half and add to cucumbers.
  5. Thinly slice red onion and add to bowl of cucumbers.
  6. Season cucumber mixture with salt and pepper then mix well.
  7. Add all dressing ingredients to a food processor (or blender). Pulse until all ingredients are mixed.
  8. Pour dressing on top of cucumber mixture.
  9. Garnish top with fresh basil and feta cheese.
