Can you believe that summer is just around the corner?  For some of you, it already feels like summer.  I love grilling fish in the summer, it just feels right!  My Grilled Blackened Shrimp Skewers are the perfect meal for a backyard barbecue or a quick weeknight meal.  Delicious blackened seasoning coated over grilled shrimp is healthy and packed with bold flavors.  This is a Weight Watchers friendly recipe and each serving is only 1 SmartPoint!

 

 

My husband and I are so excited to have our first spring/summer here in Indianapolis.  We moved here last August but were so busy getting settled that we didn’t get to fully experience summer here.  Now that it’s May, there is a free festival going on every weekend somewhere in the city.  We live about a mile from the center of downtown, so we love riding our bikes anywhere we can.  Just last weekend in the neighbor next to ours, there was a free music festival with tons of bands, local art, and food!

 

With the summer just around the corner, I always like to try and cook lighter meals.  Grilling is one of my favorite ways to cook food in the warmer months.  We don’t have an outdoor grill just yet, so when I grill I use my cast iron griddle/grill.  This thing is awesome!  I can use the griddle side to make pancakes, bacon, or veggie burgers and the grill side for pretty much anything.  Shrimp is one of my favorite foods to make at home, mostly because it takes little time to make.  I always have frozen shrimp on hand in case of an emergency dinner.  Frozen shrimp are such a great thing to have on hand.  No need to buy shrimp from the fish butcher in your grocery store, just buy the frozen bag of shrimp.

 

This recipe is so easy to follow and takes less than 30 minutes from start to finish, which is kind of amazing.  To start, soak 10 wooden skewers in a casserole dish (or large ziplock bag) for 10 minutes.

   

 

 

This recipe calls for homemade blackening seasoning.  You can totally buy your own, but I recommend making your own!  All the spices are staples in my spice cabinet and if I make extra seasoning, I just save the left over and use it on top of popcorn, roasted veggies, or potatoes.  In a small bowl, mix smoked paprika, garlic powder, onion powder, dried thyme, ground black pepper, ground white pepper, cayenne pepper, dried cumin, dried oregano, salt, and Cajun seasoning.

 

 

Add one pound of large, thawed, peeled and deveined shrimp to a ziplock bag plus olive oil and the homemade blackened seasonings.  Shake the bag to coat the shrimp.  Place 5 shrimp on each wooden skewer and set aside.  Heat cast iron grill or indoor grill over high heat for 2 minutes.  Brush olive oil over grill then add shrimp skewers.  Cook on each side for 3 minutes.

Ingredients

  • 50 Large Shrimp, Peeled and Deveined (One Pound Shrimp)
  • 2 ½ Teaspoons Blackening Seasoning or Homemade Blackening Season:
  • ½ Teaspoon smoked paprika (substitute for regular paprika if you do not have smoked paprika)
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Onion Powder
  • ½ Teaspoon Dried Thyme
  • ½ Teaspoon Ground Black Pepper
  • ½ Teaspoon Ground White Pepper
  • ½ Teaspoon Cayenne Pepper (Use ¼ teaspoon to make less spicy)
  • 1 Teaspoon Dried Cumin
  • ½ Teaspoon Dried Oregano
  • 1 Teaspoon Salt
  • ½ Teaspoon Cajun Seasoning (I use Slap Yo Mama. Omit for less spicy)
  • 2 Tablespoons Olive Oil, divided
  • Lemon Wedges, for garnish
  • Parsley, for garnish
  • 10 Wooden Skewers

Instructions

  1. Place wooden skewers into a large bowl of water and let soak for 10 minutes.
  2. In bowl, mix blackening seasonings.
  3. Rinse shrimp and pat dry. Add shrimp to large zip lock bag.
  4. Add 1 tablespoon olive oil and seasoning to zip lock bag and shake to ensure shrimp are coated.
  5. Place 5 shrimp on each skewer.
  6. Heat cast iron grill or indoor grill pan on high heat for 2 minutes.
  7. Add 1 tablespoon olive oil to grill.
  8. Place shrimp into grill and let cook for 3 minutes.
  9. Flip with tongs and let cook 3 minutes.

  2. We live in IL, but we love to visit Indy! We really enjoyed their fireworks display for 4th of July - you'll have to check it out this year! That shrimp sounds perfect for grilling this summer - so light and healthy! (And since it goes on the grill, my husband does all the cooking work!)

  3. I really want to bring these to a bbq party this weekend, am I able to put the shrimp/olive oil/seasonings in a bag ahead of time and then skewer them up when it's time to grill?
