What’s your go-to comfort food?  It varies from person to person, and for me, my choice of comfort food depends on the day.  Some days my comfort food is tacos, other days it could be mashed cauliflower.  Sometimes I have really random cravings for pasta and there’s nothing more comforting than a big bowl of cheesy pasta.  My Skillet Chicken Sausage Alfredo Pasta is the perfect bowl of comfort food to cure your cheese and pasta craving.  Delicious lean chicken sausage mixed with fresh spinach and mushrooms coated in a decadent yet healthy alfredo sauce topped with mozzarella cheese.  This is a Weight Watcher friendly recipe and each serving is 9 SmartPoints.

 

My husband and I have lived in Indianapolis for about 7 months now.  There are about 5 different chains of groceries stores here to choose from and you wouldn’t believe my excitement when I found out there was a Trader Joe’s here!  Trader Joe’s is one of the BEST STORES EVER.  They have high quality produce, fantastic freezer products, and seriously low prices.  Everything they carry is their own brand and you will find some of the most unique items at this store.

 

A few months ago I went to Traders Joe’s to pick up a few things, but ended up with a full cart of groceries.  The cashier even made a comment about how I “really stocked up”.  This is what happens every time I go there… I walk in the door with a list of what I need and walk out with a bunch of things I didn’t need but wanted.  One of items I bought but didn’t necessarily need was garlic chicken sausage.  I saw this amazing item just sitting in the meat section and knew I just HAD to get it.

 

My husband and I don’t eat a lot of pasta probably because we didn’t grow up eating it all that much.  Rice and beans was our “pasta” growing up!  Just like the random cravings for steak, I have random cravings for a big bowl of cheesy pasta.  When I have those cravings, it’s usually last minute, which is totally ok because pasta takes little time to make.  After I bought that garlic chicken sausage from Trader Joe’s, I had a major craving for cheesy pasta and that’s how this dish was born!

   

 

Skillet Chicken Sausage Alfredo Pasta is the perfect cure for when I crave a big bowl of pasta comfort food.  Sometimes I need a bowl of pasta and marinara sauce and other times I need pasta and creamy alfredo sauce.  Alfredo sauce is a real indulgence for me and I don’t eat it often because it can be rather heavy.  For this recipe, I’ve lightened up traditional alfredo sauce so that it’s more guilt free!  Most cream sauces start off with a roux.  A roux is basically a thickener for a sauce.

 

To make the roux, heat a skillet over medium low heat for a few minutes then add butter.  Let the butter melt and add minced garlic.  Slowly add in the flour and cook for 1 minute, whisking continuously.  Once the flour has cooked, slowly add milk and vegetable broth, whisking continuous.  Season the sauce with pepper, reduce heat to simmer, and let cook for about 3 minutes to thicken the sauce.  Remove from heat and add shredded Parmesan cheese.

 

 

For this recipe, I used whole wheat penne pasta, but you could also use rotini pasta or even shells!  Just cook the pasta according to the package instructions.  While the pasta is cooking, in a large skillet, saute the sausage for about 5 minutes.  Don’t worry if you don’t have a Trader Joe’s near you to find the specific sausage I used for this recipe.  You can use any chicken sausage.  Johnsonville has a great smoked chicken sausage!  Add mushrooms and let cook for another 10 minutes.  Then, add garlic, baby spinach, dried herbs and cook until the spinach has wilted.  Lastly, add pasta, alfredo sauce, and red pepper flakes.  Mix until all ingredients are well combined.

 

 

Turn off the heat and sprinkle the top with mozzarella cheese.  Cover the skillet with a lid to allow the cheese to melt.  Garnish the top with basil and enjoy!

Ingredients

  • 6 Ounces Whole Grain Penne Pasta
  • 1 Teaspoon Olive Oil
  • 12 Ounces Chicken Sausage
  • 8 Ounces Baby Bella Mushrooms
  • 5 Ounces Baby Spinach
  • 2 Cloves Garlic
  • ½ Teaspoon Dried Sage
  • 1 Teaspoon Dried Oregano
  • 1 Teaspoon Red Pepper Flakes
  • 1 Cups Reduced Fat Mozzarella Cheese
  • 1 Tablespoon Fresh Basil
  • Alfredo Sauce Ingredients:
  • 2 Cloves Garlic, Minced
  • 1 Tablespoon Light Butter
  • ¾ Cup Skim Milk
  • 1 Cup Vegetable Broth
  • 1 Tablespoons White Whole Wheat Flour
  • 1 Teaspoon Fresh Cracked Pepper
  • 2 Tablespoons Shredded Parmesan Cheese

Instructions

  1. Cook pasta according to package.
  2. Make alfredo sauce according to directions below.
  3. Dice sausage into bite size pieces and set aside.
  4. Mince garlic and set aside.
  5. Slice mushrooms and set aside.
  6. Heat large skillet over medium heat and add olive oil.
  7. Add diced chicken sausage and let cook for 5 minutes.
  8. Add mushrooms and let cook for 10 minutes.
  9. Add garlic and baby spinach and cook until spinach has wilted.
  10. Add sage and oregano and mix well.
  11. Add pasta, alfredo sauce, and red pepper flakes and mix well.
  12. Turn off heat and sprinkle the top with mozzarella cheese.
  13. Cover skillet with lid and let cheese melt.
  14. Garnish the top with fresh basil.
  15. Alfredo Sauce Directions:
  16. Heat a skillet on medium low heat for 2 minutes and add butter. Add garlic and cook for 30 seconds.
  17. Slowly add flour and pepper and cook for 1 minutes, whisk continuously.
  18. Slowly add milk and vegetable broth, whisking continuously to thicken up the sauce.
  19. Season with pepper.
  20. Reduce heat to simmer and cook for 3 minutes until sauce has thickened.
  21. Remove from heat and stir in parmesan cheese until melted.

The soup warms my insides making me feel all warm and cozy and the cheesy crackers add that crunch and element of naughtiness. And like you, I tend to stay away from pasta because of the carbines of it. . .but it is the ultimate of comfort food and the hubby and I do splurge on it every now and then (yesterday as an example). But when I do eat it. . .I like if prepared with sausage. This one looks terrific and I like that you used the whole grain penne.
