There are very specific meals I grew up eating cornbread. In college anytime I’d make those recipes my mom made, I always had cornbread as a side. It was until a few years ago that I started to make cornbread from scratch and realized there was no need to buy the boxed cornbread mix because I already have all the ingredients in my pantry!
Traditional cornbread can be full of fat and carbs so my take on the traditional recipe calls for healthy ingredients… whole wheat flour, reduced fat milk, and Greek yogurt A few months ago, I shared another version of cornbread: Skillet Green Chili Cornbread. You might be wondering why I have two versions… well my friends, one version is on the savory side with layers of green chilies and cheese, and the other version is sweeter with layers of corn kernels and honey.
Not only is this recipe less fat than traditional cornbread, it’s super easy! You just need two mixing bowls, a whisk, and a medium to small cast iron skillet!! In a large mixing bowl, whisk cornmeal, white whole wheat flour, baking powder, sugar, baking soda, and salt.
In another mixing bowl, whisk greek yogurt, an egg, 2% milk, honey, and olive oil.
After the wet ingredients are mixed, add to the bowl with the dry ingredients and whisk until all ingredients are combined. Next, add frozen corn and mix together. Preheat an oven to 350 degrees. Add the cast iron skillet to the pre-heated oven and let it sit in the oven for 10 minutes. Remove the skillet from the oven and pour the cornbread mixture into the skillet, smoothing the top with a wooden spoon.
Finally, bake for 20 to 25 minutes until the top is golden brown.
