I’m always looking for quick side dishes to each main dish I make for dinner, preferably something with low SmartPoints. Sometimes I just want to make a side that doesn’t taken too long and take up all my daily points allotment! A while back, I was brainstorming for a side dish using green beans but served cold. I grew up eating green beans and remember eating them with almost every meal, so I love green beans! While it’s easy to just open up a can of green beans and call it a day, I prefer to make use green beans. Fresh green beans are packed with more flavor and give you a nice crisp to your bite! My Quick & Easy Green Bean Tomato Salad is a great way to have a nice dose of green beans and made in less than 15 minutes! This is a Weight Watcher friendly recipe and one serving is 2 SmartPoints.
Fresh green beans, grape tomatoes, creamy avocado, and crumble queso fresco make for a perfect side dish! I call this a salad because it is served at room temperature. Of course, I had to make this into a Mexican Inspired dish because I make Mexican food a lot and need more side dishes to accompany my main dish! Making fresh green beans is super easy! I promise, once you make fresh green beans you will ditch the canned stuff.
Once you wash and trim the ends of the green beans, bring a large pot of water to a boil and add 1 tablespoon of salt. Add the green beans and let the beans cook for about 4 minutes. Next, drain the green beans. Get a large bowl of ice water ready and once the green beans are drained, dump the beans in the ice water. This will shock the beans so that they don’t continue to cook. We want the green beans to have a little crisp to them! The rest is easy! Just dice up an avocado, some grape tomatoes, crumble up some queso fresco, chop up some cilantro and add this to the green beans. Season with a good amount of salt and pepper and fresh lime juice!

Ingredients
- 1 Pound Fresh Green Beans
- 1 Haas Avocado
- 1 Cup Grape Tomatoes
- ¼ Cup Cilantro
- ½ Tablespoon Lime Juice
- 1 Tablespoon Queso Fresco, Crumbled
- ½ Tablespoon Salt
- ½ Tablespoon Pepper
Instructions
- Wash green beans and trim off the ends of the beans.
- Bring a large pot of water to a boil.
- Add 1 tablespoon salt and add green beans. Cook for 3-4 minutes until crisp.
- Drain beans immediately.
- Plug beans into bowl of ice water.
- Let sit for 2 minutes or until cool.
- Drain well and add to large bowl.
- Dice avocado into 1 inch pieces
- Cut tomatoes into quarters.
- Dice cilantro.
- Add avocado, tomatoes, cilantro, and lime juice to green beans.
- Season with salt and pepper.
- Garnish with Queso fresco.
