Every time I go out to eat at an Asian restaurant, I’m always try to eat new dishes I’ve never had before. Asian cuisine is one of my favorite types of cuisines because of all the bold flavors and unique dishes. Each time I go eat at an Asian restaurant, I leave with a mission to try and recreate the meal that I just ate. My Spicy Asian Cucumber Salad is my take on a traditional Korean cucumber salad. This dish is filled with delicious spices and fresh ingredients. This is a Weight Watchers friendly recipe and each serving is 1 SmartPoint.
In the past year, I have started to like cucumbers, weird I know. I feel like every few years, I start to like a food that I didn’t like before. This year, it was cucumbers and mustard. I’m really happy that I finally started to like cucumbers because they are in so many dishes that I love and recipes that I make!
The first time I had a cucumber salad was at a Shabu Shabu restaurant. If you’ve never been to this type of restaurant, you need to check it out. It’s such a unique experience! Basically, you order whatever type of meat and vegetables that you want and you cook it yourself in a piping hot pot of water. It’s not for everyone, but it’s worth experiencing once in your life! While waiting for the meat and vegetables to arrive to the table, I ordered a cucumber salad as an appetizer. The cucumber salad I had at this restaurant was like nothing I had ever tasted before. Crunchy cucumber tossed in a spicy yet sweet dressing. The dressing alone was the best part of the whole meal!
I really enjoy cooking Asian cuisine at home. It’s fun to experiment with unique ingredients and push myself as a home cook to new levels. Also, it’s fairly easy to make Asian dishes that are Weight Watchers friendly! A while back I was making my Slow Cooker Asian Pork Lettuce Wraps and wanted a healthy side item. I didn’t want rice, so the cucumber salad was the perfect side dish for the lettuce wraps! This salad is easy to make, refreshing, and sweet with a hint of spice.
The spice element to this salad is Gochugaru, which is a Korean chili sauce in paste form. This paste is great to have on hand because you can use this in stir fry dishes, marinade, and even ramen! I was able to find this at my grocery store in the International aisle, but you can always buy it on Amazon. This recipe is quick to make and is ready in less than 15 minutes. Just slice up the cucumber, shred a carrot, and mix together with the sauce.

Spicy Asian Cucumber Salad
Ingredients
- 2 Teaspoons Rice Vinegar
- 2 Teaspoon Gochujang
- 1 Teaspoon Sesame Oil
- 1 Teaspoon Sesame Seeds
- ½ Teaspoon Salt
- ½ Teaspoon Honey
- 1 Green Onion
- 1 Cucumber
- 1 Carrot or 1 cup bagged shredded carrots
Instructions
- Cut cucumber in half, then cut into thin slices. Set aside.
- Shred carrot and add to bowl with cucumber.
- Chop green onion and add to bowl with carrot and cucumber.
- In a large bowl, combine rice vinegar, gochujang, sesame oil, sea same seeds, salt and honey. Mix well.
- To the bowl, add cucumber, shredded carrots, and chopped green onions.
- Mix well and serve.
