Cut cucumber in half, then cut into thin slices. Set aside.
Shred carrot and add to bowl with cucumber.
Chop green onion and add to bowl with carrot and cucumber.
In a large bowl, combine rice vinegar, gochujang, sesame oil, sea same seeds, salt and honey. Mix well.
To the bowl, add cucumber, shredded carrots, and chopped green onions.
Mix well and serve.
