20 Minute Cilantro Lime Rice

20 Minute Cilantro Lime Rice is an easy, delicious addition to any meal. Fluffy rice cooked in 20 minutes, seasoned with fresh lime juice and cilantro.  The best addition to any burrito bowl!

  • 2 Cups Long Grain White Rice, Rinsed (I use Basmati Rice)
  • 3 ½ Cups Water
  • 1 Teaspoon Olive Oil
  • ½ Teaspoon Salt
  • Juice of 1 Lime
  • ¼ Cup Cilantro, Chopped


  • Rinse rice, then side aside.
  • Heat a large pot over high heat and add water.
  • Bring to a boil then add rice and olive oil. Stir and bring back to a boil.
  • Reduce heat to low, cover, and let simmer for 20 minutes.
  • Turn heat off and remove lid.
  • To the rice add salt, lime juice, and cilantro. Mix well.


Store in an air tight container in the refrigerator for up to 4 days.
