Cucumber Tomato Salad with Herb Vinaigrette

The perfect way to enjoy cucumbers.  Cucumbers and grape tomatoes tossed in a creamy herb vinaigrette topped with feta cheese.

  • 2 Medium Cucumbers
  • 1 Cup Grape Tomatoes
  • ¼ Medium Red Onion
  • 1 Tablespoon Fresh Basil
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper

Herb Vinaigrette Ingredients:

  • 2 Tablespoons Fat Free Plain Greek Yogurt
  • 2 Tablespoons Light Mayo
  • 1 Teaspoon Olive Oil
  • 1 Teaspoon Red Wine Vinegar
  • 1 Clove Garlic
  • ½ Teaspoon Dried Oregano
  • 1 Teaspoon Fresh Dill
  • 2 Tablespoons Fat Free Feta Cheese
  • Zest of Half a Lemon
  • Juice of Half a Lemon


  • Cut ends of cucumbers off and discard.
  • Slice cucumber in half, then slice the halves in half.
  • Dice cucumbers and add to a large bowl.
  • Slice tomatoes in half and add to cucumbers.
  • Thinly slice red onion and add to bowl of cucumbers.
  • Season cucumber mixture with salt and pepper then mix well.
  • Add all dressing ingredients to a food processor (or blender). Pulse until all ingredients are mixed.
  • Pour dressing on top of cucumber mixture.
  • Garnish top with fresh basil and feta cheese.
