Slow Cooker Mexican Spiced Pulled Pork
Slow Cooker Mexican Spiced Pulled Pork is PERFECT when you want flavorful and quick weeknight meals. This pork can be used to make so many quick, no fuss meals.
- 1 ½ Pound Pork Shoulder, Fat trimmed
- ½ Tablespoon Canola Oil
- 4 Cups Water
- ½ Medium White Onion
- 1 Diced Jalapeno, (Remove seeds to make less spicy)
- 1 Bay Leaf
- 1 Tablespoon Liquid from canned chipotles in adobo sauce
Dry Rub Ingredients:
- ½ Cup Brown Sugar
- 1 Teaspoon Smoked Paprika
- 1 Tablespoon Salt
- ½ Tablespoon Pepper
- 1 Tablespoon Chili Powder
- ½ Teaspoon Cayenne
- 1 Tablespoon Cumin
- ½ Teaspoon Mustard Powder
- 2 Teaspoons Garlic Powder
- 1 Garlic Clove, Minced
- 1 Tablespoon Onion Powder
Mix dry rub ingredients in a bowl and rub spiced into each side of pork shoulder.
Season pork with salt & pepper.
Add pork into zip lock bag and marinade in refrigerator for 1-24 hours.
In cast iron skillet over medium high heat, add canola oil and sear pork in skillet for 7-8 minutes on each side.
In crock pot, add 4 cups water, onion, jalapeno, bay leaf, adobo sauce.
Add pork and let cook for 8-10 hours on low heat.
Remove and shred pork.
Save the liquid from the crock pot and use for later when reheating the pulled pork.
