Quick and easy breakfast tacos

Ahhh, Saturday mornings.  These are the mornings I wait for all week long.  I am not normally a breakfast eater, but on Saturdays I become a breakfast eater, and it all started with making my own quick and easy breakfast tacos!

These are super easy, and guaranteed to be a crowd pleasure, even if it’s a crowd of just one… you!

Ingredients
  1. 4 slices uncured turkey bacon
  2. 4 low-carb flour tortillas
  3. 4 large cage free eggs
  4. Hand full of low fat Kraft Mexican shredded cheese (no need to measure here, cheese should come in hand fulls)
  5. Dash of cumin
  6. Dash of Abode seasoning (you can find this in the international aisle of the super market. This is really just cumin, garlic powder, and salt)
  7. Dash of chili powder
  8. Salt & pepper to taste
  9. Pico de Gallo
  10. 1 medium avocado
Instructions
  1. Add cooking spray in skillet and heat over medium to high heat for a few minutes
  2. Add bacon to skillet and let bacon cook on each side for about 6 minutes
  3. Once bacon is done, set bacon on a paper towel to cool
  4. Whisk eggs in a bowl until smooth and add in all the seasonings (cumin, adobe, chili powder, salt & pepper)
  5. Add cooking spray to skillet and heat over medium heat
  6. Pour in eggs and let cook for 3 minutes. Stir eggs continuously ensuring they don't get brown.
  7. Add cheese and let it melt!
  8. Slice avocado into half inch slices
  9. Heat tortilla in microwave for about 30 seconds (tips: put a tiny bit of water on each side of the tortillas and wrap tight in a paper towel. Microwaves are all different, so heat time will vary). If you have time, heat up the tortilla in a skillet on medium to low heat.
Now to assemble to tacos, which my husband says is the most important part
  1. 1 Tortilla
  2. 1/4 eggs
  3. A pinch of cheese
  4. 2-3 slices of avocado
  5. Spoon full of pico de gallo
  6. Dash of your favorite hot sauce (I recommend red or green Cholula)
