There are specific meals I make that require some type of bread to be served alongside. Spaghetti needs to be served with bread sticks, Tikka Masala needs to be served with naan, and gumbo or any kind of stew MUST be served with cornbread. My Sweet Skillet Cornbread is a healthy and delicious twist on traditional cornbread. Fluffy cornbread with a layer of corn kernels and a touch of sweetness. The perfect side for any gumbo, stew, or chili. This is a Weight Watchers friendly recipe and each serving is 4 SmartPoints.
Traditional cornbread can be full of fat and carbs so my take on the traditional recipe calls for healthy ingredients… whole wheat flour, reduced fat milk, and Greek yogurt A few months ago, I shared another version of cornbread: Skillet Green Chili Cornbread. You might be wondering why I have two versions… well my friends, one version is on the savory side with layers of green chilies and cheese, and the other version is sweeter with layers of corn kernels and honey.
This recipe is super easy to make! You just need two mixing bowls, a whisk, and a medium to small cast iron skillet. In a large mixing bowl, whisk cornmeal, white whole wheat flour, baking powder, sugar, baking soda, and salt. In another mixing bowl, whisk Greek yogurt, an egg, 2% milk, honey, and olive oil. Add to the bowl with the dry ingredients and whisk until all ingredients are combined. Next, add frozen corn and mix together.
Preheat an oven to 350 degrees, then add the cast iron skillet to the pre-heated oven and let it sit in the oven for 10 minutes. Remove the skillet from the oven and pour the cornbread mixture into the skillet, smoothing the top with a wooden spoon. If you do not have a small cast iron skillet, just use a regular sized muffin tin pan! This recipe makes 8 cornbread muffins.
Finally, bake for 20 to 25 minutes until the top is golden brown.

Ingredients
- 1 Cup Yellow Cornmeal
- ½ Cup White Whole Wheat Flour
- 1 Teaspoon Baking Powder
- 1 Teaspoon Sugar
- ½ Teaspoon Baking Soda
- ½ Teaspoon Salt
- ½ Cup 2% Milk
- 1 Egg
- ½ Cup Fat Free Plain Greek Yogurt
- 2 Tablespoons Honey
- 1 Tablespoon Olive Oil
- ½ Cup Frozen Corn
Instructions
- Preheat oven to 350 degrees
- In a large bowl, whisk cornmeal, flour, baking powder, baking soda, sugar, and salt.
- In a medium bowl, whisk milk, egg, oil, honey, and Greek yogurt.
- Add egg mixture to cornmeal mixture and stir to combine well.
- Add corn and mix well.
- Place skillet into a heated oven for 10 minutes.
- Remove skillet and pour batter into cast iron skillet.
- Bake for about 20-25 minutes until top is golden brown.
- Insert toothpick through the center of the cornbread to make sure it comes out clean.
Notes
