20 Minute Cilantro Lime Rice

 

One of the most popular recipes on this site is my Cilantro Lime Quinoa.  It’s a delicious twist on the rice we all know and love from a certain fast casual restaurant.  Several years ago, I worked in Human Resources at a similar fast casual restaurant and learned how to make all the food the restaurant chain served.  When my Cilantro Lime Quinoa recipe was born, it was inspired by this restaurant chain.  I love quinoa, but sometimes crave traditional rice.  My 20 Minute Cilantro Lime Rice is an easy, delicious addition to any meal.  Fluffy rice cooked in 20 minutes, seasoned with fresh lime juice and cilantro.  The best addition to any burrito bowl!

 

I love my quinoa version of this… it’s so delicious and a great twist on the rice version.  BUT I love rice, and when my kids were just starting to eat solid foods, quinoa was a bit harder for them to eat.  Quinoa is smaller and doesn’t stick together so their tiny, cute little hands had a hard time grabbing it.  I started to make this rice, instead of plain white rice, anytime I made a burrito bowl for dinner.  As you can see, I’m basically trying to make sure my kids like cilantro and lime from an early age… because I’m sure they are going to be obsessed with Mexican food when they are older just like me.

 

This rice is so easy to make!  I use Basmati Rice for this recipe.  Rinse the rice, then set aside.  Add 3 ½ cups of water to a large pot and bring to a boil.  Add the rice and olive oil, stir, and bring to a boil.  Once the rice/water is back at a boil, reduce heat to low, cover, and let simmer for 20 minutes.  After 20 minutes, turn the heat off, remove the lid, then add fresh lime juice, salt, and cilantro.  Mix well.

Ingredients
  

  • 2 Cups Long Grain White Rice, Rinsed (I use Basmati Rice)
  • 3 ½ Cups Water
  • 1 Teaspoon Olive Oil
  • ½ Teaspoon Salt
  • Juice of 1 Lime
  • ¼ Cup Cilantro, Chopped

Instructions
 

  • Rinse rice, then side aside.
  • Heat a large pot over high heat and add water.
  • Bring to a boil then add rice and olive oil. Stir and bring back to a boil.
  • Reduce heat to low, cover, and let simmer for 20 minutes.
  • Turn heat off and remove lid.
  • To the rice add salt, lime juice, and cilantro. Mix well.

Notes

Store in an air tight container in the refrigerator for up to 4 days.
