Ever since I got pregnant with my first baby, I have become a huge breakfast eater.  I used to never eat breakfast and now I cannot function without eating something in the morning.  Sometimes I eat savory, but mostly I eat something sweet.  My Almond Butter Overnight Oats are so easy to make and packed with delicious flavor.  Oats mixed with almond milk, yogurt, syrup, chia seeds, and almond butter are guaranteed to keep you full until lunch.  My kids love this too!

 

I’m the queen of an easy breakfast.  I have two impatient toddlers so it’s really impossible for me to make breakfast from scratch.  Overnight oats have become my absolute favorite thing to eat (and serve) for breakfast.  There are a million different recipes and variations out there, and I’ve tried so many, but this recipe has been my tried and true standby for a while now.

 

To a jar/container, add old fashioned oats, almond milk, fat free Greek yogurt, almond butter, syrup, and chia seeds.

Stir the mixture until well combined.  Add the lid and store in the refrigerator for at least 10 hours, up to 3 days.

I make this recipe for my 2 toddlers, but reduce the milk to 1 cup and the chia seeds to half a tablespoon.  My 15 month old son hasn’t quite mastered the art of scooping food with a spoon, so he uses his hands and reducing the liquid helps him scoop it up!

Ingredients
  

  • 1 Cup Old Fashioned Oats
  • 1 ½ Cup Unsweetened Almond Milk
  • ¼ Cup Fat Free Vanilla Greek Yogurt
  • 1 Tablespoon Almond Butter
  • 1 Tablespoon Maple Syrup
  • 1 Tablespoon Chia Seeds

Instructions
 

  • Mix all ingredients into an airtight container.  Store in the refrigerator for up to 3 days.

Notes

For my toddler friendly recipe, I only use 1 Cup Almond Milk to make the oats have less liquid, specifically for the young toddlers that can’t use a spoon yet!  Reduce chia seeds to ½ tablespoon.
