I love a good bowl of chili. Chili is one of my favorite dishes to make because it’s so versatile. You can make so many variations of chili, and I have a lot of different variations on this blog. I recently made a new kind of chili and I think it might be my new favorite! My Black Bean Turkey Chili is a delicious blend of black beans, spiced ground turkey, peppers, and tomatoes coated in a thick refried bean sauce. Hearty, healthy, and packed with so much delicious flavor! Guaranteed repeat meal for yourself or your family.
Creating recipes is fun, but now that I have two little mouths to feed, I’m always thinking about meals they can and WILL eat too. I really try to brainstorm recipes that are one pot or in a casserole. Cooking needs to be easy for me because I basically cook while they are both napping so I’ve got about a 1 ½ hour window of my day to prep, cook, and clean. This Black Bean Turkey Chili is made in one pot and in under one hour… double win!!
To start, chop onion and bell pepper, then set aside. Heat large pot over medium heat and add olive oil.
Add onion and bell pepper, stir, and sauté for 5 minutes until onion is translucent. Increase heat to high-medium and add ground turkey and cook for about 7 minutes, breaking into small pieces, until full cooked.
To the pot, add diced tomatoes, refried beans, black beans, tomato sauce, chicken broth, chili powder, cumin, garlic powder, paprika, Mexican oregano, and salt. Mix well, bring to a boil, and reduce heat to low. Partially cover and let simmer for 10 minutes, stirring occasionally. Remove lid, stir in masa, and let simmer for another 10 minutes.
While the chili is cooking, I like to make homemade baked tortilla strips to add to my bowl of chili! Preheat oven to 375°. Place tortillas on baking sheet in an even layer. Spray each side of the tortilla with olive oil cooking spray, flipping them over to spray the other side. Using pizza cutter, slice each tortilla in half then slice into strips. Season the tops with salt and chili powder. Bake for 10 minutes until golden and crispy.
