One of the joys of cooking is finding healthier alternatives to foods I love. This is what being on Weight Watchers for years has taught me… always look for a healthy alternative. Sometimes I’m really in the mood for pasta but want to save a bit on carbs. Spaghetti Squash is the most amazing vegetable ever. When cooked just right, it’s just like actual spaghetti. My Roasted Spaghetti Squash is an easy way to prepare spaghetti squash for any recipe. Delicious spaghetti squash is the perfect healthy alternative to traditional spaghetti noodles. This is a Weight Watchers friendly recipe and one cup is 0 SmartPoints.
Have you ever had spaghetti squash before? To be honest, it took me a while to try it. Spaghetti Squash became super popular a few years ago but I just couldn’t seem to try it. Finally I did, and I couldn’t believe how much it resembled regular spaghetti noodles! Preparing spaghetti squash takes a bit of time, but it’s totally worth it to be able to enjoy “pasta” without all the carbs.
Spaghetti Squash has seeds in the middle, so the easiest way to get the seeds out is to cut the squash in half and scoop them out. The squash is a bit tough, so to make it easier to work with I like to microwave it for a few minutes before I cut into it. Place the squash in a microwave safe dish and microwave for 7 minutes, flipping halfway through.
Preheat the oven to 400 degrees. Once the squash is cool enough to handle, cut the squash in half lengthwise. Scoop out the seeds with a spoon and discard the seeds. Line a baking sheet with parchment paper and place the squash on to sheet, cut side up. Brush the cut side with olive oil then season with salt and pepper.
Roast in the oven for 1 hour and 5 minutes, until the squash is tender.
Once squash is cool enough to handle, spread the inside with a fork, to make spaghetti like noodles. Shredded into a large bowl.

Ingredients
- 2 Small or Medium Spaghetti Squash
- 1 Teaspoon Olive Oil
- ½ Teaspoon Salt
- ½ Teaspoon Pepper
Instructions
- Preheat oven to 400 degrees.
- Piece spaghetti squash several times with fork. Microwave for 7 minutes, flipping once.
- Cut squash in half lengthwise and scoop out seeds. Discard seeds.
