I love using a crock pot to cook large amounts of meat to transform in a variety of meals. Cooking meat in a crock pot is the best way to get pulled or shredded meat without having to use the oven or the stove. I am a huge meal planner and spend hours on Saturday morning planning out what I’m going to make that week. I spend a few hours in the kitchen each Sunday prepping out everything for the week. To me, it’s totally worth spending time in the kitchen on Sunday to allow me to spend LESS time in the kitchen during the week.
This shredded chicken recipe is the best recipe for making shredded chicken. It’s a classic dump and cook recipe, which I love! Just dump all the ingredients into the crock pot and let that baby cook. What I love about shredded chicken is that I can use it for TONS of recipes. Tacos, enchiladas, pizza, stuffed peppers, casseroles, you name it. Another great thing about cooking meat a head of time is that you can freeze it. I have bags of already cooked shredded chicken and pulled pork in my freezer so that at any time I can pull it out of the freezer and make dinner. Meal prep= TIME SAVER!
This recipe is super easy. To a crock pot just add chicken breast, chicken broth, water, salt, pepper, garlic, carrots, celery, bay leaf, and onion. Let cook low and slow for 8-10 hours.
After the chicken has cooked, just remove from the crock pot and shred with two forks. The chicken is so tender, it will just fall apart!!
Adding the veggies gives the chicken tons of flavor. What I love about this recipe, is that you can turn the chicken into so many different recipes. When I want to use this chicken for enchiladas, I just add Mexican spices to the already cooked chicken and dinner is almost ready!

- 2 Pounds Chicken Breast
- ½ Large White Onion
- 1 Cup Low Sodium Chicken Broth
- 4 Cups Water
- 2 Teaspoons Salt
- 1 Tablespoon Pepper
- 2 Cloves Garlic
- 2 Carrots
- 1 Celery Stalk
- 1 Bay Leaf
- Cut onion into quarters and add to crock pot.
- Add chicken breast, chicken broth, water, salt, pepper, garlic, carrots, celery, and bay leaf.
- Cook on low for 10 hours.
