Appetizers are one of my favorite things to make and eat. Food made into just the right size so that I don’t feel guilty for eating more than one bite. For the holidays, my family always does a potluck party with appetizers only… and it’s the best thing ever! Just think, a line of appetizers of all different flavors. It’s like a party in my mouth! My Black Bean Nacho Cups are the perfect party appetizer packed with delicious nacho flavors. Wonton wrapper nacho cups stuffed with black beans, corn, cheese, topped with fresh pico de gallo and avocado crema. Super easy to make and guaranteed to please a crowd! I think we can all agree that appetizers are made for parties. They kinda make the party… am I right?! It’s so fun to try a plate filled with different appetizers. Sometimes, I just make a bunch of appetizers at home so my husband and I can have appetizers for dinner. No need to wait until our next party invite to eat appetizers when we can just make our own party at home. It’s silly I know, but a fun way to shake things up.
A while back I was brainstorming for fun and easy appetizers to make for Super Bowl. Super Bowl is one of those days I live for as a home cook because I can get away with making appetizers and secretly making those said appetizers healthy. This year for Super Bowl, a few friends of ours will be visiting from out of town, so this means we will be having a party… a party of 4 but it’s still a party and the perfect excuse to bust out my appetizer making skills.
When it’s time to make a bunch of appetizers, I always like to have different types: dips, meatballs, and little bite sized snacks. For the dip, queso will be served for sure. As for the little bite sized snacks, I thought of nothing better than these Black Bean Nacho Cups. One of my favorite appetizers is nachos. Nachos have two my favorite foods: beans and cheese. Making nachos for a party can be a bit challenging because the chips can get soggy… and nobody likes a soggy nacho!
These nacho cups are the best thing about nachos without the mess or soggy chip issue. Crispy wonton wrappers filled with spiced black beans, corn, cheese, topped with pico de gallo and avocado crema. Sounds delicious, right? They really are y’all! These are just like nachos but better. Using wonton wrappers as the chip is the real secret to making these nachos crispy. Wonton wrappers are awesome and baking them first ensures they are crispy and chip-like.
Not only are these nacho cups amazingly delicious, but they are easy to make and can be made ahead of time. Wonton wrappers can be found in the produce section where tofu and vegan cheese are located. The first step is to bake the wonton wrappers before filling them. To a greased muffin tin, gently press the wonton wrapper into the tin to make a cup like shape then bake in the oven for 8 minutes.
After the wontons have baked, they are crisp and the perfect vessel for the filling. While the wontons are baking, heat canned black beans on the stove for a few minutes. To the beans add chili powder, cumin, garlic powder, and salt to give the beans more flavor. Fill each wonton cup with a tablespoon of black beans, then top with corn and cheese. Bake for another 2 minutes to let the cheese melt.
I like to serve my nacho cups with fresh Pico de Gallo and Quick & Easy Avocado Crema. Be sure to check out my recipe for pico de gallo and . This recipe is super easy to make and will stay fresh in the refrigerator for up to one week!
The avocado crema can be made well ahead of time and is great to serve as a dip or served over tacos! To make the avocado crema, to a food processor or blender add avocado, fat free plain greek yogurt, cumin, jalapeno, onion powder, cilantro, water, salt, lime juice, and the zest of half a lime. Just blend for a few minutes and it’s ready to go! Avocado crema will stay fresh in the refrigerator for up to 4 days!

Black Bean Nacho Cups
Ingredients
- 12 Wonton Wrappers
- ¼ Cup Canned Refried Black Beans
- 1 Teaspoon Chili Powder
- ½ Teaspoon Cumin
- ¼ Teaspoon Garlic Powder
- ¼ Teaspoon Salt
- 1/3 Cup Corn
- ¼ Cup Reduced Fat Colby Jack Cheese
- Pico de Gallo, For garnish
Avocado Crema Ingredients:
- 1 Haas Avocado
- 2 Tablespoons Fat Free Plain Greek Yogurt
- ½ Tablespoon Cumin
- 1 Jalapeno (Remove seeds to make less spicy)
- 1 Tablespoon Onion Powder
- ½ Cup Cilantro
- 1 Garlic Clove
- 1 Cup Water
- 1 Teaspoon Salt
- Juice from 1 Lime
- Zest of Half of Lime
Instructions
- Preheat oven to 350°.
- Heat beans in a pot and add chili powder, cumin, garlic powder, and salt.
- Coat muffin tin with cooking spray.
- Gently press 1 wrapper down into each tin and spray tops with cooking spray.
- Bake for 8 minutes.
- Fill cooked wonton cups with one tablespoon black beans, one teaspoon corn, and top with one tablespoon cheese.
- Bake for 2 minutes.
- Garnish with pico de gallo and serve with avocado crema.
Avocado Crema Directions:
- Add avocados, Greek yogurt, cumin, jalapeno, onion powder, cilantro, garlic, water, lime, and lime zest in a food processor (or blender).
- Mix will and refrigerate for later.
