Brussel Sprouts are one of those vegetables you hated as a kid, but love as an adult.  You can transform these tiny gems of goodness in so many different ways… brussel sprouts can roast them, sauté them, shave them, eat them raw, make them sweet, make them spicy…  The list goes on and on!  I have made tons of different variations of brussel sprouts, but my current obsession is my Sriracha Honey Brussel Sprouts.  This is a Weight Watcher friendly recipe and 3 SmartPoints per serving.

 

I know what you might be thinking…. How spicy will this be??  Sriracha is spicy and can totally overpower a dish.  Believe me, I’ve made the mistake of putting too much Sriracha on my ramen and it was not pretty.  Before you get nervous about how spicy the sauce on the brussel sprouts might be, the sauce in the recipe is actually made with honey and Sriracha so the heat isn’t too over powering.  The sauce is sweet with just a kick of spice; it is so good that you will want to dip anything you can get your hands on into this sauce!

 

Sriracha Honey Sauce

 

This is the perfect side dish because it’s quick to make and go well with any main meal.  Just roast the brussel sprouts in the oven for about 25 minutes, then toss with the Sriracha Honey sauce, and you are all set!   Sriracha Honey Brussel Sprouts are roasted to give it a nice crunch and the sauce coats each little gem to give it a delicious surprise taste.  Your dinner guests will wonder what’s in the sauce!  It can be our little secret :).

Sriracha Honey Brussel Sprouts

Ingredients

  • 1 Pound Brussel Sprouts
  • 1 Tablespoon Olive Oil
  • 1 Teaspoon Red Pepper Flakes
  • 1 Tablespoon Honey
  • ½ Tablespoon Sriracha
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper

Instructions

  1. Preheat oven to 400 degrees.
  2. Wash Brussel sprouts and remove any discolored outer leaves.
  3. Cut stem off brussel sprouts, then cut in half.
  4. In a medium bowl, toss brussel sprouts with olive oil and season with salt and pepper.
  5. Spray baking sheeting with non-fat cooking spray and place brussel sprouts on pan in a single layer.
  6. Roast brussel sprouts in the oven for 25 minutes until they are golden brown and fork tender.
  7. While the brussel sprouts are roasting, in a small bowl, mix honey and Sriracha until well combined.
  8. Once brussel sprouts are done roasting, transfer to a medium bowl, drizzle Sriracha Honey sauce and toss to coat.
  9. Top with a drizzle of sriracha if desired.
