Every once in a while, everyone deserves a good steak. When I make steak at home, my husband is always really excited. Almost every time I tell him that I’m making steak, he response with “YOU”RE MAKING STEAK?!” Yes, I’m making steak! Making steak at home is always a nice treat, especially served with a delicious side. My Steak & Grilled Corn Zucchini Salad is packed with flavor and perfect for a date night at home. This is a Weight Watcher friendly recipe and the steak is 9 SmartPoints and the grilled corn zucchini salad is 4 SmartPoints.
I think what makes this steak so full of flavor is the dry rub… Brown sugar and a mixture of seasonings rubbed into the steak creates a nice crust once it’s cooked. I always love making dry rubs at home. This dry rub is a great blend of sweet and spice. It’s delicious! When I created this recipe, I had just purchased a cast-iron grill/griddle so I knew I had to break the grill in with cooking a steak. There’s nothing better than cooking with a cast iron skillet and this grill is even better!
Although the steak is the star of the show, the salad is the perfect co-star to the steak because it’s fresh and easy to make. While the steak is marinating in the dry rub, grill the corn and slices of zucchini. I absolutely LOVE my cast iron grill. It’s the perfect length to fit the corn and zucchini, and I’m telling you, you can seriously cook anything on this thing!! Once the vegetables have a nice char on them, remove from the grill, cut off the corn kernels and slice up the zucchini. In a skillet, sauté onion and jalapenos for a few minutes then add tomatoes, beans, grilled corn and zucchini. The salad only take a few minutes to cook and goes perfect with the steak. Delicious, packed with flavor, and quick to make.

I can still hear my husband saying “You’re making steak!?” I don’t make steak all that often, but when I do make it I know that my husband truly get excited and feels like it’s a treat.

Ingredients
- 4 Sirloin Steaks, lean and trimmed
- 2 Teaspoons Light Brown Sugar
- ½ Tablespoon Ancho Chili Powder
- ½ Tablespoon Smoked Paprika
- 1 Teaspoon Kosher Salt
- 1 Teaspoon Black Pepper
- ½ Teaspoon Cayenne Pepper
- ½ Teaspoon Mustard Powder
- 1 Clove Garlic, Diced
- ¼ Teaspoon Coriander
- ½ Teaspoon Cumin
- 1 Tablespoon Canola Oil
- 1 Ear Corn
- 1 Zucchini
- ¼ Red Onion
- 1 Jalapeno
- 1 Cup Grape Tomatoes
- ½ Cup Cilantro
- Juice from 1 lime
- 1 Cup Canned Black Beans, rinsed and drained
Instructions
- Combine all dry rub ingredients in zip lock bag, add steak and marinade for 1 hour.
- Slice zucchini into 3 slices.
- On grill over medium high heat, grill corn and zucchini for about 10 minutes until all sides are lightly brown.
- Cut off kernels from the corn and place in a bowl.
- Cut zucchini into slices and add to bowl of corn.
- Dice onion, jalapeno, and grape tomatoes.
- Dice cilantro and set aside.
- In the small skillet, spray with non-fat cooking spray and add onion, jalapeno, tomatoes, corn, black beans, and lime juice.
- Season with salt and pepper and cook for about 10 minutes.
- Add cilantro and turn off heat.
- Add oil to the skillet and grill steak for about 5 minutes on each side until temperature is 130 degrees. Remove steak and let rest for about 10 minutes before cutting.
- Top steak with grilled corn and zucchini salad.
