I love strawberries!  Strawberries are one of my favorite fruit.  I began to really like them when I first signed up for Weight Watchers.  Every day I have a cup of bananas and strawberries as my zero point snack.  I still can’t believe that strawberries are FREE!  A while back I wanted to make a dessert that featured strawberries and lemon.  Most of the time when I’m brainstorming a dessert I try to find a way to make it a breakfast meal as well.  It’s just my husband and I at home so we really don’t need to have a bunch of desserts laying around!  My Strawberry Jam Crumb Bars are sweet, crunchy, and perfect for dessert OR breakfast!!  This is a Weight Watchers friendly recipe and each bar is 6 SmartPoints.

 

These bars are super easy to make and while they taste so good it will make you think they are unhealthy, they are actually low-fat.  The bottom layer is moist batter, the middle is a fresh, homemade strawberry lemon jam, and the top layer is crunchy and sweet.  The batter is simple to make!  Just mix the flour with really, really cold butter.  Using a fork, cut the butter into the dough.  You’ll know once the dough is done when you start to see a “crumble” effect.  You could use a pastry cutter, but I wanted to use a fork so I could get a little arm work out :)!

Next, combine the egg and vanilla, add to the dough, and mix well.  Using a 8×8 baking dish, layer half of the dough on the bottom and push the dough into the dish to make an even layer.

   

 

 

The layer of strawberry jam is the JAM!  It’s so good and super simple!   In a small bowl, combine fresh diced strawberries with sugar, lemon juice, lemon zest, and cornstarch.  Once you mix the ingredients you will see a syrup starting to form.  Layer the strawberry jam onto of the first dough layer then place pieces of the rest of the dough over the strawberry jam.  Be careful not to push the dough too hard into the jam layer!

 

 

 

 

After all the dough has been layered, bake for 45 minutes!

Ingredients

  • ½ Cup White Sugar
  • ½ Teaspoon Baking Powder
  • 1 ½ Cup White Whole Wheat Flour
  • ¼ Teaspoon Salt
  • ½ Cup (8 Tablespoons) cold Light Butter
  • 1 Egg
  • 1 Teaspoon Vanilla
  • 2 Cups Strawberries
  • 1 Tablespoon Lemon Juice
  • Zest of Half a Lemon
  • ½ Cup White Sugar
  • 2 Teaspoons Cornstarch

Instructions

  1. Preheat oven to 375 degrees.
  2. Spray 8x8 baking pan with non-stick cooking spray.
  3. Dice strawberries and set aside.
  4. In medium bowl, mix ½ sugar, flour, baking powder and salt.
  5. Using a fork, cut the butter into the flour mixture. Work the dough until butter pieces are small. The dough will have a crumble effect.
  6. In small bowl, beat egg. Add egg and vanilla to flour and mix well.
  7. Put half dough evenly into the bottom of pan. Press dough into the dish to make even layer.
  8. In bowl, mix ½ cup sugar, lemon juice, lemon zest, and cornstarch. Stir in strawberries.
  9. Spoon strawberries over dough layer..
  10. Crumble the remaining dough over strawberries.
  11. Bake for 45 minutes until top is lightly golden brown.
  12. Cool completely before cutting.
