Lately, I’ve been on a low carb kick. In the winter months, I eat a lot of potatoes, bread, and higher carb foods… I feel like carbs make me warm! Spring is just around the corner so it’s time to kick the carbs (and the sweaters) to the side and eat a bit lighter. My Skillet Caprese Chicken is a delicious and filling low carb meal perfect for a quick weeknight meal. Lean chicken breast topped with delicious tomatoes, balsamic vinegar, and cheese all made in under 30 minutes! This is a Weight Watchers friendly recipe and each serving is only 5 SmartPoints!
I don’t know about you, but I’m seriously ready for Spring-like weather. Although our first winter in Indianapolis has not been too bad (it’s only snowed a hand full of times), I feel like the winter seems to be dragging on. Maybe it’s normal to still be thirty degrees in mid March?! We have a few mini vacations scheduled for the Spring and one of those trips is back to Texas next week. I’ll be able to get my Spring-like weather there… I’m pretty sure it will be 80 degrees the whole time!
My husband and I are headed back to our former home town, Austin, for a wedding. A couple friend of ours is getting married and we couldn’t be happier for them! This couple has a pretty exciting life. The soon to be wife is a travel nurse, so every 3 months or so she takes a nursing assignment in a different city. The soon to be husband works from home so he can live anywhere as long as there is internet. We’ve really enjoyed getting to see their adventures in the various cities they’ve lived in over the years and we’ve even visited them in a few of the cities! A few years ago we visited them in Portland, Oregon, and about a month ago we visited them in Madison, Wisconsin.
Whenever we travel, my husband and I always try to do activities outside, like hiking or biking. When we visited our friends in Portland, we took a 4 hour drive down the coast of Oregon and went to Cape Perpetua to go hiking. I’ve only seen the Pacific Ocean once in my life so I was really excited to see the views. We hiked up a mountain so we could get to the top and get a full view of the ocean. It was an incredible experience that I will never forget!
Our trip to Madison was just as fun! I’ve never been to Wisconsin before so Madison was a great city to check out first. We ate lots of cheese and had a ton of fun. The weather was amazing for mid February so we rode our bikes all around the city.
Next week, we will be in Austin… plenty of sunshine and tacos! I’ll be sure to update y’all on our adventures next week. I do know that one of our adventures will be some time on Lake Travis. It’s totally normal to be in your swimsuit in March, in Texas!
Since I’m about to get a big dose of Spring-like weather next week, I’ve been on a low-carb kick the past weeks to drop a few of those winter pounds I’ve been hiding under my sweaters. The great thing about being on Weight Watchers is that I can still eat amazing and delicious food that’s low carb without sacrificing flavor. Another great thing I love about Weight Watchers is that I can go on my trip and eat what I want without worrying about gaining a bunch of weight. As soon as I get back from vacation, I just have to eat Weight Watchers friendly food for a week and be back on track.
Low carb meals can be totally boring if you aren’t creative. Nobody wants to eat plain chicken breast and vegetables every day. My Skillet Caprese Chicken is the perfect low carb meal without it tasting like it’s low carb. Delicious lean chicken breast topped with tomatoes and cheese… talk about flavor! Not only is this meal packed with flavor, it’s easy to make and ready in under 30 minutes.
The recipe starts with cooking chicken breast in a skillet. Anytime I cook chicken in a skillet, I like to cut the chicken breast in half. Chicken breast is often too thick straight out of the package and won’t cook evenly in a skillet, so cutting the chicken in half speeds up the cooking and ensures the chicken cooks all the way through. Once the chicken breast is cut in half, add to a large skillet over medium high heat and cook for 7 minutes on each side. Once the chicken is cooked, remove the chicken from the skillet and set aside.
In the same skillet, sauté shallot and garlic for a few minutes then add sliced cherry or grape tomatoes. Cook the tomatoes until they are soft, about 6 minutes. Add seasonings, balsamic vinegar and cook for another minute or so to thicken up.
Remove the tomatoes from the skillet, then add the chicken breast back to the skillet. Pour the tomato mixture on top of the chicken.
Turn the heat off, sprinkle mozzarella cheese on top of the chicken and place a lid on top to let the cheese melt.
Garnish with basil and enjoy!!

Ingredients
- 1 ½ Pound Chicken Breast (2 Large Chicken Breast)
- 1 Teaspoon Salt, Divided
- 1 Teaspoon Pepper, Divided
- 1 Tablespoon Olive Oil
- ½ Shallot
- 2 Cloves Garlic
- ¼ Teaspoon Dried Oregano
- 1 Teaspoon Red Pepper Flakes
- ¼ Cup Balsamic Vinegar
- 1 Pint Cherry or Grape tomatoes
- ½ Cup Reduced Fat Shredded Mozzarella
- 2 Tablespoons Fresh Basil, for garnish
Instructions
- Mince shallot and set aside.
- Mince garlic and set aside.
- Dice tomatoes in half and set aside.
- Lay basil leaves on top of each other, roll up, and then slice. Set aside
- Lay on parchment paper, cut chicken breast in half to make 4 chicken breast.
- Lay another sheet of parchment paper on top of chicken and pound chicken breast to make them even.
- Heat large skillet over medium high heat, add olive oil.
- Add chicken breast to skillet and season with ½ teaspoon salt and ½ teaspoon pepper.
- Cook for 7 minutes on each side then transfer to a plate.
- Reduce heat to medium low, add shallot to skillet and sauté’ for 3 minutes.
- Add garlic and sauté for 1 minutes.
- Add tomatoes and season with oregano, red pepper flakes, ½ teaspoon salt and ½ teaspoon pepper. Cook for about 6 minutes until tomatoes are soft.
- Add balsamic vinegar and cook 2 minutes to thicken up.
- Remove from skillet and set aside.
- Add chicken back to skillet and pour tomato mixture over chicken.
- Turn off heat.
- Sprinkle top of chicken with cheese and cover skillet with lid and let cheese melt.
- Garnish with basil and serve.
