Comfort food comes in all flavors and varieties. Sometimes my comfort food changes daily! My current obsession is soup. Even though it’s not winter anymore, I still crave a big bowl of warm soup. My Slow Cooker Chicken Tortilla Soup is delicious comfort in a bowl. Tender shredded chicken cooked in a spicy broth for hours with pinto beans and corn is perfect to enjoy year round! I can’t believe it’s taken me this long to share my version of Chicken Tortilla Soup! There are so many delicious variations of this recipe out there, but what sets mine apart is the spices. I am a spice lover by nature so of course my version of this recipe is going to have a kick!
Another thing that sets my recipe apart is how delicious the chicken tastes! I’m telling you, if you are going to eat Chicken Tortilla Soup, you MUST cook it in a slow cooker. There is something so delicious about chicken breast cooked low and slow that is unmatched. I like to make this on Sunday to have on hand for week day lunches!
To a crock pot/slow cooker, add chopped onion, bell pepper, garlic, jalapeno, chicken breast, fired roasted canned diced tomatoes, chili powder, cumin, salt, Mexican oregano, chicken broth, water, and tomato sauce. Cover with lid and cook on high for 4 hours or low for 8-10 hours.
Remove chicken breast, shred, and add back to crock pot. The chicken will be so tender, it will practically shred itself!
Slice tortillas into ½ inch cubes and add to crock pot.
Add lime juice, pinto beans and corn to crock pot and cook for another 30 minutes.
Garnish with crisp tortilla strips, cheddar cheese, greek yogurt, and cilantro!

Ingredients
- ½ White Onion
- ½ Red Bell Pepper
- 3 Cloves Garlic
- 1 Jalapeno (Remove Seeds to make less spicy)
- 1 ½ Pounds Chicken Breast
- 1 Tablespoons Liquid from Canned Chipotle In Adobo Sauce
- 1 Can Fire Roasted Diced Tomatoes
- 2 Teaspoons Chili Powder
- 2 ½ Teaspoons Cumin
- 1 Teaspoon Salt
- ½ Teaspoon Mexican Oregano (Or regular Oregano)
- 1 ½ Cups Chicken Broth
- 2 Cups Water
- 1 8 Ounce Tomato Sauce
- Juice of Half Lime
- 1 ½ Cups Pinto Beans
- 1 Cup Frozen Corn
- 3 Corn Tortillas (I use Mission Ultra Thin Corn Tortillas)
- Tortilla Strips, For Garnish
- Fat Free Greek Yogurt, For Garnish
- Cilantro, For Garnish
Instructions
- Chop onion, bell pepper, garlic, and jalapeno and add to a crock pot.
- Add chicken breast, diced tomatoes, liquid from canned chipotles in adobo sauce, chili powder, cumin, salt, Mexican oregano, chicken broth, water, and tomato sauce to crock pot.
