One of my favorite party appetizers is jalapeno popper dip. Have you ever had it?! It’s delicious. Cream cheese, shredded cheddar cheese, mixed with fresh jalapenos and baked until bubbly. I wish I could eat it right now, but this dip is not the friendliest on my waist line. Luckily, I have a chili recipe that can cure my craving. Slow Cooker Jalapeno Popper Chicken Chili has all the great flavors of the beloved party dip without the guilt. Slow cooked chicken mixed with a creamy broth, white beans, and you guessed it… cream cheese! This is a Weight Watcher friendly recipe and two cups is 4 SmartPoints.
I’m always looking for creative ways to redo classic recipes. There are so many different recipes in my head for soups, chili’s, and stews. In the winter, I could eat chili every day… no joke. Delicious seasoned meat mixed with beans is so hearty and comforting on a cold day. While I love my “Texas Chili” , I like to change things up a bit and use chicken (instead of beef) with a white cream sauce, rather than tomato sauce.
A few months ago on one of my splurge days (days when I get to use extra Weight Watcher points), I made Jalapeno Popper Dip for my husband and I to munch on during Sunday football. You’ve had Jalapeno Popper dip right? Well if not, you need to get some in your life ASAP. Softened cream cheese mixed with shredded cheese, diced with jalapenos, topped panko and baked until bubbly. It’s oh so good! Unfortunately, this dip is reserved for special occasions for me (parties or splurge days).
A few weeks ago, I was craving this dip and craving chili at the same time (a frequently dilemma that I deal with… craving two things at the same time). Usually when I am faced with this dilemma I just combined the two things that I’m craving and cross my fingers that it works. I decided to take a leap of faith and marry these two dishes. It worked! This chili is so good and surprisingly not high in Weight Watcher SmartPoints. Super easy to make, packed with fresh ingredients, and tastes JUST LIKE JALAPENO POPPER DIP!! I like to make this in my crock pot on a Friday so that my husband and I could eat this soup all weekend, that way I don’t have to cook or we don’t have to eat out!
Not only is this chili delicious and filling, it’s also made in the crock pot so it’s a great meal to make during a busy work week! To a crock pot, add diced jalapenos, onion, garlic, and bell pepper. Next add chicken broth, seasonings, white northern beans, and chicken breast. Cook on low for 8-10 hours or on high for 4-6 hours. Once cooked, remove the chicken breast from the crock pot and shredded with two forks. The chicken is so tender and moist that it will fall apart with little effort!!
Add the chicken back to the crock pot along with light cream cheese and cook for another 30 minutes. The cream cheese melts to perfection and makes a delicious cream sauce to coat the chicken and beans.

Not too spicy with just the right kick. Great for any day of the week. I like to serve my chili with homemade tortilla strips, a pinch of Monterey jack cheese, and diced avocado. Only 4 Weight Watchers SmartPoints for two cups!

Ingredients
- 3 Jalapenos (Remove seeds to make less spicy)
- ½ Large White Onion
- 1 Clove Garlic
- 1 Red Bell Pepper
- 2 Cups Low Sodium Chicken Broth
- 1 ½ Cup Canned White Northern Beans
- 2 Teaspoon Salt
- 1 Tablespoon Pepper, to taste
- 1 Tablespoon Mexican Oregano (or regular oregano)
- 3 Teaspoon Chipotle Chili Powder
- 1 Tablespoon Cumin
- 2 Pounds Chicken Breast
- 6 Ounces Light Cream Cheese
- ¼ Cup Chopped Cilantro
- ¼ Cup Chopped Green Onions
Instructions
- Dice jalapenos, onion, garlic, bell pepper and add to crock pot.
- Add chicken broth, beans, and seasonings to crock pot.
- Place chicken breast in crock pot. Cook on high for 4-6 hours or low for 8-10 hours.
- Remove chicken from crock pot and shred with two forks.
- Add chicken back to crock pot.
- Add cream cheese and mix well.
- Cook for 30 minutes.
- Turn off heat and add cilantro and green onions.
- Garnish with Monterey jack cheese, tortilla trips, and diced avocado.

January 12, 2017 at 11:24 am Great question!! You can use non-dairy cream cheese to substitute regular cream cheese. I know Trader Joe's sells this. You could also look for something at your local grocery store in the section where tofu is. You could even use silken-ed tofu. I haven't tried it, but I've heard it has the same consistency. April 19, 2017 at 5:29 pm I like my soup a bit on the thick side so I only add 2 cups of chicken broth. You could totally add a 1/2 cup of chicken broth or water to the recipe if you want!
